Great care for quality and respect of the environment are the characteristics we value when choosing the products in our menu. Below our partner companies that produce the raw material and ingredients of our dishes.
CHEESE
he cheese we serve is processed in Sutrio, by Latteria Sociale Alto But, a dairy store founded in 1969, which collects most of the milk produced in the valley.
VEGETABLES AND JAMS
Vegetables we use for our soups and jams we serve are produced by the organic farm La gallinella Saggia from Cavazzo and La Sisile from Villa Santna, which follow nature seasonality and respects its whole genuine goodness.
COLD CUTS
Our salami and our steacks are processed and smoked Tolmezzo by Macelleria Adami – butcher shop, the sousage are processed in Sutrio by La Vecje Becjarie butcher shop with a traditional technique and a natural smoking process not including any extra preservatives, additives or coloring.
FLOUR
Rustic polenta we serve is produced with Farina di Polenta Socchievina, a semi-wholegrain yellow stone ground flour from organically grown corn.
FISH
The trout of our menu is bred in Sutrio with a traditional technique used by La Trute fish shop, where it lives and is fed in spring water coming from Zoncolan basin.
